The mere thought of a pan of ooey, gooey, chewy, cheesy lasagna sends Garfield into a ravenous rapture. So who better to promote National Lasagna Day, Friday, July 29th?
Garfield has a long love affair with this perfect package of pasta, cheese, and marinara. From the moment of his birth in Mama Leone’s Italian kitchen to today, Garfield has never met a lasagna he didn’t like.
So caught up in the lasagna love fest, Garfield is even forgoing his afternoon nap to join a Live Tweet on Friday, July 29th with his partner in comic land crime, GoComics. #ASKGARFIELD will commence at 11:30 a.m. CDT — and last until the garlic bread runs out — at 12:30 pm CDT.
Makes 10-12 servings … or 1 Garfield-size serving!
Cook beef, sausage, onions, and garlic over medium heat until browned, stirring to crumble. Drain well. In a separate bowl, mix tomato paste, tomato sauce, and water together. Add parsley, basil, fennel seeds, and tomatoes to the sauce mixture.Add sauce mixture to the meat. Simmer 15 minutes or until thick, stirring occasionally.
Meanwhile, cook lasagna noodles according to package directions. Drain well.
In a bowl, make the ricotta cheese mixture by combining eggs, cottage or ricotta cheese, pepper, and Parmesan cheese; mix well.Spread about ½ cup meat sauce in a greased 13 by 9 by 2-inch baking dish. Layer half of the noodles on top of the meat sauce. Top with half of the ricotta cheese mixture, mozzarella cheese, and meat sauce. Repeat layers, ending with meat sauce, saving enough mozzarella cheese for eventual top layer. Cover and bake at 350°F for 30 minutes. Uncover and add the reserved mozzarella cheese. Bake 10 minutes to melt cheese. Let stand 10 minutes before cutting.
Note: When cutting the lasagna, try cutting the top layer of cheese with a pair of scissors to get the size pieces that you like. Finish cutting with knife.
